A beyond delicious granola recipe to pair with your active lifestyle and daily glass of kombucha. Made with all kinds of healthy goodies and packed with flavor, this granola makes for a healthy breakfast, snack, dinner (we won't judge), or dessert!


Ingredients

1/4 cup almond butter (or nut butter of your choice)

1/4 cup honey (@sunrisehives)

2 tbsp coconut oil (melted)

1 tsp cinnamon

1 tsp vanilla (or maple extract)

1/2 tsp salt

3 cups oats (@goodearthnaturalfoods)

1/2 cup slivered almonds

1/2 cup chopped walnuts

1/2 cup chopped cashews

1/4 cup pumpkin seeds

1/4 cup toasted buckwheat

1 cup dried fruit like raisins, zanthe currants, or figs (@thebeeskneesnaturalfoods)


Instructions

  1. Preheat oven to 250°F.

  2. Soften almond butter, honey, and coconut oil by microwaving in a microwave safe bowl for 30 seconds or by placing in the oven in an oven safe bowl for a few minutes while it preheats.

  3. In a large bowl, whisk together the almond butter, honey, coconut oil, vanilla, cinnamon, and salt. Add the oats and nuts. Stir until well-combined.

  4. Spread the granola in an even layer on a parchment paper lined baking sheet (use 2 baking sheets when needed). Cook for 45 minutes - 1 hour. Stir halfway through to prevent burning on the bottom and edges.

  5. Once the granola is a golden brown, remove it from the oven and stir in dried fruit.

  6. Let granola cool before breaking into clusters. It will harden as it cools. Store in an airtight container. Cheers!
